Extending a Hot and Cold From the Boiler for a new Bathroom

I'm putting a new bathroom in the back bedroom which should be straight forward as the boiler is situated in that bedroom. I have added a photo of the boiler and the hot and cold pipes are the ones either side of the middle pipe . My question is where is the best place to tap off the hot and cold pipes in that photo and which method is the best way to do it?
