Unsure what to do with this plumbing puzzle

Hey all.

I have two pipes, one hot water, one drinking water.

Previously the ran inside a boxin against a wall. We have just knocked down said wall and now need to find a way of running the pipes down the wall and around the corner under the sink. An added complication is that we have to also run water off the cold pipe to a washing machine so will require another connection.

We are unsure wether we should chase the pipes into the wall (supporting but a corner) and bury the plethora of connections behind plasterboard. Or if we should just accept the aesthetic issues of a box in again.

Here is a better image. The two vertical
Pipes we would intend to replace as two long runs but then we need to connect the white pipe into them and then get them round the corner to the left of frame.

Should we chase into the wall and have all those connections harder to access?

Should we box them in?

Can we run the white pipe behind some skirting instead of under the floor?

Should we do copper or pex?


Sorry for all the questions. Just really need some advice.
