Mixer tap for gravity fed system

I'm in a 2 storey Victorian, with covered cold water tank in loft and hot water cylinder next to kitchen on ground floor.
I need to replace kitchen mixer tap. I understand I'll need one suitable for lower-pressure systems, but am unclear whether I need one which internally separates the cold (drinkable mains) water from the hot. I don't know whether current tap does this, and just push it all the way to cold and run briefly to flush it before filling a glass.
Do most taps have separate channels for hot and cold?
