I have a Direct Hot Water cylinder with 2 immersion heaters, one positioned through the side at the bottom and one positioned two thirds towards the top.
QUESTION - Which immersion should I have swithed on for general daily hot water. neither are connected to Economy 7.

As the hot water is drawn from the top of the cylinder you want the top one on during the day.

Hi, even though you dont have Economy7 you can still use cheap rate electricity set a timer on the lower element and set it to come on between 12 and 6am to give you a full tank of hot water if your tank is well lagged it will stay hot for the day, just make sure that the time clock you fit can carry a 13A load.
Hope this helps
