Laying Quarry Tiles and Whats Best to use to Fix Them Down

Hi - so we are replacing a section of quarry tiles in our kitchen that had been damaged by screed but were unsure of what best to use to fix the new (reclaimed) tiles down with

The tiles are 150mm thick and have been laid on a concrete base (that is somewhat uneven after digging up the old tiles)

I've read that a mixture of concrete and sharp sand is best, can anyone confirm this? At what ratio?

What concrete should I use because there are a lot of options at the DIY stores?

Is sharp sand or builders sand the best (I have read a few conflicting things and this has confused me about which to use)
