Raising kitchen floor by 5-20mm for tiling

We live in an old cottage with an unlevel tiled kitchen floor. There was a 1m2 section that was raised above the rest of the floor which I wanted to match the rest of the floor so I removed the tiles on this section and removed the concrete base. I then added a dpm and new concrete at a lower level and I was going to add a slightly sloped screed so that i could tile it to match the rest of the sloping tiles but then I did some more reading and it said that you can't apply a semi dry screed as thin as I would like (5mm) and self levelling compound is not the right consistency to make a slope. Does anyone have any ideas what I should use that can be applied between 5-25mm deep and does not self level but is a thicker consistency? I saw a video for surfix screed set which looks like a good product as it is Ideal for ramping transitions and can be applied ½”-3” thick but I can't find it in the UK.
