Fitting Kitchen Units To Uneven Wall

Hi folks. After a bit of head scratching I thought I'd ask the experts!
Currently fitting a new kitchen and one wall which is of stone/brick construction is giving me a headache. It's quite uneven in places and I'm wondering what is the best technique to fix kitchen wall units to it?
I'd considered sacrificing a bit of space and making a ladder frame (probably not the right terminology) and fixing the units to that but would it be strong enough?
Any other suggestions? I don't really want to go to the bother of getting the wall plastered as the section below the wall units will be tiled (this part is fairly flat) and the area above the units I was thinking of panelling or similar.
