Ceiling Leveling for Beauty Salon

Hi! I have a beauty salon opening in a couple weeks. I hired the same builder to do floors, ceilings, walls, plumbing, carpentry, demolition, etc. and have a question about the quality of their work as it will determine the amount of DIY I have ahead of me.
Regarding the ceiling, the builder did not level it during installation. The molding along the top of the walls runs crooked compared to some of the window frames and it looks less than ideal (also considering we use sections of wood wall paneling throughout which makes the crookedness even more apparent). When I hired a builder to do the floor, the walls, the ceiling, plumbing, electrical, etc., is it reasonable to have expected them to level the ceiling even though it's an old space and some parts are inherently going to be crooked? This is for a £20K+ full shop fitting renovation.
