Fitting Conservatory Against Stone Wall With Uneven Surface

Hi - just looking for some advice . I am going to install a conservatory on the front of my house . The house is made from old stone and the surface is very uneven. Some stones project out quite a way more than others. Would it be best to cut some of the stone back where the conservatory butts against the house to flatten the adjoining areas or is there a better method of doing this ? Any advice welcome .

My parents had an extension added to the back of their home for a conservatory and the lower part of their walls are uneven stone. They found it very difficult to find anyone who was willing to help, however, they did get some advice from a local builder who informed them of the do's and don'ts so I'd highly recommend getting some expert advice before you start to carry out any of the labour!
