Help With Blocking up Internal Doorway Between Living Room and Kitchen

Hello, I'm going to block up a door between the living room and kitchen. It's a brick and plaster wall, and I'm going to build a plasterboard stud wall in opening. I'm not going to plaster it myself as all previous attempts to plaster were a disaster. Two question I have are:

- Should I set surface of the plasterboard a couple of mm back from surrounding wall surface to aid plastering? Keep getting told different things.

- The wall will end up being behind the hob. Am I best using moisture-resistant plasterboard on the kitchen side?

if you get a long straight piece of timber and hold ot across the opening, your plasterboard should be set 2-3mm back from the finished surround.
ordinary plasterboard will be sufficient, I would also consider insulating the studding before boarding, fibreglass will do
