Preparing for laying new patio: shall I pull the up existing slab?

My builder walked away from our extension project before he finished the garden. He's left a 125 mm thk concrete slab for laying a black limestone patio but the slab level is quite high - there's only room for a ~40mm thk bed before the slabs go higher than the patio doors sill. Some landscapers are saying they can lay the patio slabs with a bed that thin, whilst others are saying they will do it but not guarantee it. So, I have the option of letting them try or paying for them to pull up the concrete and 'start again' from the bare ground. Would be great to get a second opinion on this, please.

Provided the finished patio level is more than 150mm below your DPC and adequate falls can be achieved, go for the topping off option.
