Cleaning up and sealing stonework and old walls

Our house is about 150 years old (maybe older) and we decided to remove the old 'plaster' to reveal the stones. The plaster was, i assume lime based with sticks, hair and small stones. I have roughly got rid of the loose stuff but I'm after advice about the next steps. Do I clean off the stones with brick acid or soapy water? Do I use a stone enhancer? How do I seal it to stop it constantly crumbling. Any advice welcome
