Cutting off hot water supply

hi,
i would like to replace all taps in my property. i have one problem though, the plumbing system in my flat does not seem to have a facility to turn off supply of hot water.
what do i have to do in order to remove the mixer taps without flooding the whole place? is turning off the cold water supply and then drain the water heater a good idea? any other suggestions?

i have a Telford Tornado (or Tempest not sure) water heating.

pls help :(

hi
i would approach it this way
if its a combi when you turn off the water at the internal stop valve (stop cock ) this will stop the hot as well as the cold
if its not a combi then turn off the isv and drain the hot thru the taps when it stops you should be ok to carry on
when fininshed turn on the isv refill the system
