In a visual sense its ok as the gaps etc will not be see (presumably) but from a construction point of view, which is what is important, it is not fine at all. Plaster adds and insulative quality to teh wall and if the uncovered areas will be colder than the plastered areas. This means that warm air could condense on the cooler surface and cause problems with mould. If this is unseen it could be very problamatic. The new plastering does not have to be "pretty" but it should be done and to cover the holes etc with a product called One Coat plaster will not take any time at all and it costs very little. Insist they do it. All you need is the same thickness of plaster as then the walls will stay at the same temperature all over and no cold spots will form.
