I have a built in oven which plugs into a standard 3 pin socket which is supplied from a 30amp cooker circuit. If I replace my oven with one with a higher rating, needing to be hardwired, would I be able to replace my 3 pin socket with a terminal type box?

Depends on the rating of the replacement oven - you need to be aware of total load on the circuit. Recommend you get a sparky in.
