Fitting flooring up against a stone wall

I live in A 100 year old cottage where one of our intrenal walls in the livingroom is a stone wall. I want to fit laminate flooring in this room but I will be unable to get the laminate to butt up along the stone wall as it is uneven. The other 3 walls will be fine as I am going to pull the skirting off and replace with new. should i cut a profile on the laminate of the stone face or should I use a filler to seal the gaps??
Any easy fix for this problem or easy way to cut an uneven profile on the laminate??
