Knocking Pipes

We have recently had new taps fitted to the basin and bath in the bathroom. Obviously we had to turn the water off at the stop cock for this work to be carried out. The work was completed and the water was turned back on but now the pipes start knocking every time we turn the taps off. This happens with both the hot and cold taps. The plumber turned the pressure down and the knocking stopped but there was not enough water pressure coming out of the taps and if we turn the pressure up, even slightly, the pipes knock. What is causing the pipes to knock and how do we stop this happening.

Try clipping the pipework.
