Opinions on Garage Plastering for Gym and Storage

I have a double garage and split one side to storage and one side is going to be a gym. Originally I was going to put up cheap boarding and paint it but thinking [putting up plasterboard may make a better job long term. In peoples views am I taking on a tough job which is not worth it and also would you if you used plasterboard batten it and not stick direct to brickwork and maybe add some insulation.

you can buy insulated plasterboard, various thickness, and use a drywall adhesive to stick it to the wall
