New Kitchen Taps Hot and Cold on Different Sides Drainage and wastage systems and plumbing help, advice and answers

Hi I have just purchased a Francis Pefler Araya deck sink mixer tap which has the normal hot / left cold/ right configuration. Unfortunately my kitchen has been plumbed the other way round, cold/ left etc. I can't see any evident means of unscrewing the tap head so that I could change over the ceramic cartridges and I really don't want to use flexable hoses as we have got used to the setup as they are. Any advice would be much appreciated.
