I've got a quartz worktop in my kitchen with a double undermount sink (Carron Phoenix Fiji 200 https://www.carron.com/sinks/fiji-748). It was put in about 8 or 9 years ago and the gap between surface and sink sealed with silicone.
The sealant got mouldy and started leaking water where the water drains from the draining board. I've done my best to clear out all the old sealant, using silicone eater and a blade. However the gap between the sink and the surface is only a couple of mm, so it's hard to get it all out, i'm not even 100% sure i've got out all the silicone eater I put in.

My question is what to do next, it feels like it will be hard to get a good seal on such a small gap, ideally i'd drop the sink down, clean and seal it and then remount it. However, the way the builders fit the sink doesn't easily allow this. They put a shelf under the sink and used a combination of packers and foam to keep the sink in place. I feel this is the cause of the sealant failing and going mouldy in the first place as it left too big a gap.
I imagine my options are just try sealing it and hope it works, or try and cut away the foam, remove the packers, clean it up and then remount in in possible the same way. I could try contacting the manufacture to find out about a proper mounting kit, might be difficult to fit at this stage though.
What's my best option? Who would be ideal to get in to do a proper job, a builder or a kitchen fitter?
