Understanding my unvented water system

Good morning, I was hoping somebody may help me understand my Unvented system! Basically I replaced my kitchen tap, turned the stopcock off and within 10 seconds both the hot and cold stopped running.

But my question is, just by turning the stopcock, how does this stop the hot water when there’s a tank full of it?

It’s driving me potty because I don’t understand how it works!

Hi mattywolves
I assume you have a megaflow or similar hot water cylinder. These are dependent on mains pressure to force the hot water out of the top connection.
