Connecting a 3 gang switch requires a bit of thought, concentration and technical knowhow even when you're on site with it in front of you so to be able to talk you through this remotely from the description you've given is extremely difficult as there are so many possibilities depending on the way you have installed & connected the cables.
My guess is you've got the feed to the under cupboard light connected to the L2 connection of the kitchen light switch which energises when the kitchen light is off, but de-energises when its switched on.
Its the "and vice versa" bit that complicates things which seems to suggest you've got the understairs light connected wrong as well.
If on investigation what I've said is found to be correct take cable from L2 connection and make it permanent live.
Should then work OK.
