Problems re-oiling beech worktop and not soaking in

I have two patches on my beech worktop that don’t seem to absorb the oil/have the same finish as the rest of the surface. They are also lighter than the rest of the surface and the texture feels different, doesn’t come up smooth.
This is the second time I have re-oiled them, sand them down, the finest grit used was 120, wiped down with white spirit then used danish oil, couple of coats with time allowed to dry between coats.
My assumption is I spilled something there, or over sanded them?
Does anyone have any advise on what I’ve done wrong and how to fix it?
