Replacing laminate flooring on ground floor need help

I wanted to replace the laminate flooring in the ground floor in our house (1950s built) with solid or engineered wood. As I lifted up the current flooring I discovered brick or tile under the surface kitchen tile extending into the dinning area.

I also found concrete between the joists of what I assume is the subfloor. Is the concrete something I should be worried about? There is no noticable damp anywhere in the house which we have been in for 5 years now.

I could use a self adhesive underlay on top of the brick/tile in the kitchen but would it be better just to dig it all out? It extends under the chimney breast so I am concerned that it might be structural?
