wendy, forget about turning around your doors, there are lots of door handles that bolt right through the door to the handle on the opposite side of the door, they then have a cover over to hide the nuts and bolts. obviously new handles are required but this is the easyest option.

no probs using mdf, very easy to paint and does not warp, very stable so long as its kept dry, water is enemy of mdf.

u will need to pack behind the skirting in order to stop it folding in . so i would knock in some wedges and then cut them off flush with plaster to stop the skirting folding in.

i would use stainless steel pins for architrave or if unavailable use sheradized pins, for cills i would pellet the cill then use stainless screws then fit pellet and plane then sand.

sounds like you have got some moisture getting in the doors. are you having other work done to other parts of your property ie plastering, the doors will suck the moisture out of the atmosphere. doors should be hung only when everything is fully dry.
