Fitting reversible gate hinges

I am having two wooden drive gates made, each one is about 1100mm wide (height about 6ft). The gate posts are 100x75 wall plates and fixed solidly to brick walls. I have 600mm reversible gate hinges to hang these gates, but in respect of the play in the hinges, I'm not sure how I should go about it....

Hi KB, thanks for your reply. The boards are 22mm thick and some of them have bowed, becoming high in the middle along their length so I'd like to replace them. Other than that, I'm rebuilding the whole bathroom and the rather uneven floor is the only original bit left, so I'm quite keen to replace ...
