Use a slip socket so you can butt up the two ends of the pipework without needing any play in the pipework - ie fit the tee where you need to but do another cut in the pipework further along so you will be doing two areas of soldering

Its either pumping over, which is unlikely as you would have noticed it before, or the float valve at the f&e tank needs replacing or adjusting

Have you opened the stop tap all the way ? you should have good water pressure at the cold tap, and if you have then you should have good water pressure at the hot tap also, if poor pressure and flow rate at the hot tap then you might have some debris blocking the cold inlet to the boiler so only ge...
