PEX Pipe on solid fuel boiler

Hi
I have just got a new Solid Fuel Cooker Boiler.
I would plumb this using copper but with the price of pipe and fittings I am thinking of using PEX Pipe and fittings. How far from the boiler should I run the Copper before using the PEX.
Any related advice would also be welcome.

Stone wall insulation

I need help deciding how to best insulate solid stone walls (no external render)

I was thinking some kind of dry wall e g Kingspan with wood or metal batons or stuck on to the wall.
Would prefer to have a gap for services.

Thanks Lucy :?
