Are you wanting to insulate at roof level or ceiling level?

There are numerous insulations: blown celulose fibre, mineral fibre, glass fibre, polystyrene (EPS), polyurethane (PUR). They have different pros, cons and costs. You will need to give some more details for further advice.

Are there a lot of tie-bricks? Each one will be a terrible thermal bridge, and I'd really look at internal or external insulation, which is a much better-performing solution anyway. Cavity is cheap and easy, but the gains are quite limited.

I don't believe so. (My previous install was all-hep20 with a combi). The only reason you need to use copper for the last bit is it if it on view and you don't like the aesthetics of plastic.
