I am trying to install a new ceiling light. There is an existing plastic setting in the ceiling with a bunch of red and black wires and one earth all running into the plastic casing out of which come two brown wires that currently feed into the light fitting.

I was expecting a brown and a blue. How do I wire two brown?

take a look at how they are connected in the top and replace it with a piece of normal twin and earth
