They will dry out and want to be below 18%moisture content before they are plasterboarded

It can be done, maybe a window board approx 2" thick with 3" projection fixed through the face and a rebated architrave.
The rebate would be the depth equivalent to he distance from the wall to the inside face of the widow approx 5mm by the look of the photos

Forget marine ply, It needs a lot of work to maintain.
Bite the bullet and buy Duraply very expensive but it lasts

The hips are at a different pitch as they are falling from the ridge point in 2 planes where as the Rafters in only 1 plane, but as long as the Rafters are level with the top of the hip and land on the wall plate with the birdsmouth cut adjusted to level the Rafters to the hip, it will work and the ...

Hi I know it's very late after original post, but just wanted to say if the old doors were 40mm then these doors will have been metric doors and the 35mm doors you then bought to replace were imperial so I guess the height and width would also of required re-sizing and a lot of additional work.
