on your first issue just seems like the locking mechanism has broke on the fan lights that's why they are staying shut , will need repair specialist to sort out they are tricky to do . your front door issue the strike catch that is sticking in can be removed it has a small screw on it put some greas...

it seems the opening bi fold door has been packed to high on installation it will need re packing and bringing down u say it was fitted a year ago will the fitter not come back out and re adjust

Hi this may be a little late but it indeed does sound like they are fire escape handles which at first glance look like there is no key hole but most manufacturers put a black grommet in the original hole where the key would have fitted which can be removed with something sharp then exposing the key...
