You can buy a kit for doing the hinges now,just do a search for it and you can get hinges easily to open past 110 degrees,as for how many--four will be fine at that height stick them at (this isnt critical) 125 or 150 to the centre top and bottom and then spread equally in between.

You didn't mention what the material was,but assuming it is chipboard then that is the problem with it,once it's knackered it really IS!!! Cut your boards to fit ,then lay against the wall. Now depending on the thickness of board at the top you can mark a pencil line running along the top of the board and if possible chop into the plaster at the worst points,sinking the skirting board in a little to the wall.
