You can not spur from a spur.
However, you could (as you said) change the socket to a fused connection unit, then supply any further sockets from the fused side of this FCU this would be ok. I will leave testing it up to you.

The reason you have 6 wires (and earth) is because it is 2 way switching. That means you can turn a light on here, go elsewhere and turn the same light off (Upstairs and downstairs?) In the U.K. There is no colour code for wiring lights, so it is not possible to say "This colour wire goes here, and that colour wire goes there" you are going to have to call an electrician, look at your previous photo or trial and error

At the end of the day, you would still have to find a plasterer to do the job, so why not ask them first. (There are no full time plasterers on this forum.)

I would guess you have connected it wrong.
The wires you have (Not counting earth) are Permanent Live, switched Live, neutral.
You have connected the fan to permanent Live and neutral
You should have connected it to Neutral and Switched live

The decision of what colour to use to supply what is up to the person that installed it, so it is NOT possible for anyone on any forum to say put this wire in this terminal, that wire in that terminal and the last wire in the last terminal, it needs to be tested to establish what does what. It would appear that who ever installed the new cables intended they should be used as feed and return for lights two and three. That will work, providing the existing switch is bypassed.
