Felting is a bit 'overkill'. Membrane will do, but I would use a rubber compound sealant on the timber, then you can forget about it. Interlocking tiles good idea from Stoney, if it has to be slate, look at new imitation ones made from weird plastic type stuff, they lock and look right too.

Small amounts of aerosol foam will be OK in blobs, but it can expand enough to lift the slate and cause wind damage or damp. I would use PINKGRIP or Gripfill , similar adhesive. Wipe the area to be stuck with dry cloth to remove dust and most dirt and use 15-20 mm blobs. (We are talking inside???). ...

Secret Gutter? NO NEED I would strip back all the tiles against the wall 2-3 courses in, and put breathable membrane in first. It's light, thin and flexible enough to go over the laths., Then soakers etc back over the lot., Make sure it flaps into the gutter. We have done similar but as it was a hid...

seems a shame to cover old stone with render that then needs constant painting and then damp pushes it all off in two years?????? . Can you not power wash it all out and then lime point it all to keep some kind of feature.

Not impossible, but hard messy work.
1) Angle grinder. Messy and noisey.
2) Hire a compressor, buy a couple of air hammers (small ones about £25), get on with it.... OR
3) just go over the whole lot with Decopierre or some other high build product.

Curved tops ok

There are plenty of window makers that will make you a window with a curved top. Are you fitting wood or PVCu. Make a template with hardboard or plasterboard and shop around.
